Food Friday! Lamb Tajine

Difficulty Level: 1 PITA

Cookware:
Crock Pot, Dutch Oven, or any type of Slow Cooker

Ingredients:
3 lb. lamb stew meat, cut in 1-inch chunks
1 large onion, chopped
3 carrots, chopped
2 parsnips, chopped
12 dried apricots, cut in half
1/4 cup dried cherries
2 cups chicken stock
1 1/4 teaspoons kosher salt
1/4 teaspoon pepper
1/4 teaspoon ground ginger
1/4 teaspoon cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon cayenne

Chop all vegetables and dried fruit and place at the bottom of slow cooker. Loosely place meat on top of vegetables. Whisk together chicken stock and all salt, pepper, and spices. Pour mixture over the meat. Turn slow cooker on. The longer this dish sits on low heat the better it will be but a safe bet for tasty goodness is no less than 5 1/2 hours on low heat. Mix together the ingredients during the cooking process if you have the chance, or at the very least 10-20 mins before serving.

Sides: Millet Schwarma (Pictured above. Recipe coming soon…)
Booze: A bold red – shiraz, syrah, or the Boen Pinot Noir would pair nicely.

For weight loss: reduce amount of meat, increase amount of veggies.
